Ingredients
6 cups Autmn vegetables ( cubed) such as Butternut squash, carrots, Brussel sprout halves, turnips, sweet onions, baby potatoes
12-24 whole cloves of garlic, peeled (depending on your taste)
1/2 cup olive oil
2 Tbsp fresh chopped rosemary
2 tsp dried tarragon
2 Tbsp honey (Orange Blossom or Wildflower are my picks)
Salt
Fresh ground black pepper
Directions
Preheat oven to 400 degrees. Toss all ingredients until well coated. Place on a generously greased baking sheet. Roast for 20-30 minutes or until tender
